These delicious sweet pancakes are flavoured with vanilla and
are great fun to make with the kids. They work with any sweet
filling or sauce but are particularly delicious with cherries.
Ingredients
1 large egg
300ml milk
100g plain flour
1 tbsp caster sugar
1 tbsp vanilla extract
25g butter
390g jar of Bonne Maman cherry compote
200ml pot crème fraîche
4 tbsp granola
Instructions
Put the egg, milk, flour, sugar and vanilla in a bowl and whisk until smooth.
Melt a little butter in a non-stick frying pan or crepe pan. Add 1/8th of the batter and tilt the pan until the mixture covers the base. Cook for 1 minute and then toss and cook for a further 1 minute. Repeat to make 8 pancakes.
Heat the cherry compote until warm and divide between the pancakes, folding each gently into quarters. Arrange 2 on each plate.
Put a large spoonful of crème fraîche on each plate and sprinkle with granola.
Cook’s Tips
Pancakes cook very quickly so for perfect round pancakes remember to tilt and turn the pan as soon as the batter is added. For a cheat’s version of this dessert Superquinn also sell fresh packets of ready made crepes and pancakes.
