Good farmed salmon practices are essential in the growing of a high quality, superior salmon. Salmon start their lives as eggs, hatched in freshwater where they are grown for one and a half years. After this time, salmon are transferred to sea water where they are grown in large net enclosures, moored in deep oceanic waters. This ensures that there is sufficient water exchange to provide a constant supply of clean, well oxygenated water. The Marine Institute of Ireland continually assesses the waters for contaminants and pollutants. The salmon are fed three times daily and the feed consists of fish meal, fish oil and a small amount of wheat or grain to bind it all together. The fish meal is produced using only fresh, whole wild fish and fresh trimmings from the fish processing sector. Irish fish meal is manufactured in plants accredited to ISO 9002 quality standard and ISO 14001 environmental standard.

After 12-18 months at sea the salmon is ready for harvesting. Just before harvesting, checks are undertaken to ensure all fish are healthy and fit for human consumption before they are delivered to the processing plant. Harvesting and packing is carried out on the same day to ensure the maximum quality and freshness and this allows the salmon to be available on the Irish market the next day. The sites in which Irish salmon are grown are high-energy, exposed sites on the rugged west coast of Ireland. Stocking densities on Irish farms are low, 98.5% of what is in cages is pure, fast moving seawater. It should be noted that salmon are naturally shoaling, social animals and the densities on Irish farms mimic closely how the fish would behave in the wild. The Irish farmed salmon industry is a fraction of the size of that in any other country and plans for expansion are modest and very tightly controlled.

BIM has devised industry standards for farmed seafood that form the basis for quality assurance schemes, all independently audited and certified by a European Standard accredited body. The QSP symbol on a salmon product is an assurance that the salmon has been hatched, raised, harvested, packed and processed under a strict quality assurance scheme. It is also an assurance that there is traceability of the product from hatchery to retail shop.
