Bacon & Maple Syrup Savoury Pancakes

Fruity Pancakes

Ingredients:

8-12 rashers lean
Maple Cure back bacon
100g/4oz plain flour
1 egg
125ml /1/4pt milk
5ml/1tsp oil
Maple syrup

Ingredients:

150g light cream cheese softened
1 tblsp icing sugar, to sweeten
400g tinned pear slices (in juice), drained
150g mixed frozen berries, defrosted
6 plain pancakes
Ground cinnamon or icing sugar, to dust

Method

1. Make batter for pancakes - Place flour in bowl.
2. Make batter for pancakes - Place flour in bowl.
3. Make well in centre of flour and add egg.
4. Beat egg and slowly add flour.
5. Add milk gradually until flour, egg and milk have combined into a smooth thick batter.
6. Grill rashers of bacon for about 2-4 mins under a hot preheated grill.

Method:

1. Mix together the cream cheese and icing sugar.

2. Place the berries and pear slices in separate pans and heat gently until warmed through.

To make pancakes;

1. Heat oil in a non-stick pan. When hot, tip out any residue oil.
2. Add 4 large spoonfuls of batter, allow to set and brown on one side before carefully turning.
3. Repeat using all batter.
4. Serve pancakes stacked with crispy bacon rashers and liberally pour over maple syrup.
