These tasty burgers are simple to make and can be on the BBQ

and cooking in less than 10 minutes.

Ingredients

4 large Superquinn baking potatoes
2 tbsp Superquinn olive oil
500g lean, Superquinn beef mince
2 cloves garlic, crushed
½ onion, very finely chopped
4 tbsp red pepper salsa dip

Instructions


  1. Preheat the oven to 400° F, 200° C, Gas 6 and add a roasting tin to warm. Cut the potatoes into wedges and par-boil for 5 minutes. Drain, toss in the oil and cook in the tin for 25 minutes until browned.

  2. Put the mince, garlic, onion, salt and pepper in a large bowl and knead together with your hands until well mixed. Divide the mixture into 4 and shape into burgers.

  3. Cook the beef burgers and onions on the barbecue. The burgers take between 3-6 minutes each side depending on taste. Toast the buns.

  4. Divide the rocket and onions between the toasted bases, top each with a burger, a slice of cheese and 1 tbsp salsa. Top with the bun lids and serve with the potato wedges.


Cook’s Tips


Charcoal barbecues are ready to cook on when the coals are glowing red with a thin layer of grey ash.
