For Christmas this year why not bake a cake, 
try this simple light christmas cake  


Ingredients 

Lot 1:
225g / 8oz Plain Cream Flour     
175g / 6oz Marg or Butter (at Room Temperature) 
175g / 6oz Light Muscavado Sugar 
4 Large Eggs 
Rind of 1 Lemon 
Rind of 1 Orange
1/2 Teaspoon Mixed Spice
1/2 Teaspoon Nutmeg
2 Tablespoons Whiskey (optional)

Lot 2:
300g Currants 150g Sultanas
150g Raisins
100g Cherries
100g Mixed Peel
100g Chopped Almonds
100g Ground Almonds
Tin Size - Deep 8”/19cm round or 7” / 18cm
Square Tin


Instructions


  1. Preheat the oven to 120C / 220F/ Gas Mark 1
  2. Line the tin with a double layer of baking
    parchment.
  3. Place all the ingredients from Lot 1 into a llarge Mixing bowl and beat until smooth
  4. Mix Lot 2 ingredients together and add to Lot 1. Stir until well combined
  5. Transfer to the prepared tin. Smooth Top
  6. Bake for 4 hours approximately. Check at intervals after 2.5hours as ovens vary
  7. Leave the cake in the tin until cold
  8. To Decorate - brush with heated jam or honey & cover with Marzipan. Leave for 24 hours to set
  9. Brush Marzipan with a little alcohol and cover with ready to roll icing. Decorate as liked..
